To set the record straight, I did not create this recipe. I found it online (site is now lost to me) when I thought to myself one day how much I wanted to see a cheescake in cookie. With the magical help Google, I found this recipe and have kept it at hand whenever I needed a quick and easy cookie to impress a crowd.
1 cup cream cheese (8 oz.); softened
1 cup butter; softened
2 cups sugar
1/2 tsp. salt
1/2 tsp. baking powder
2 cups flour
- Preheat oven to 350F.
- In a large bowl, beat together cream cheese and butter. Gradually beat in sugar at medium speed until light and fluffy. Beat in eggs and salt.
- Whisk baking powder and flour together in a small bowl and, mixing on low speed, add to cream cheese mixture.
- Drop by rounded tablespoonfuls onto parchment-lined cookie sheets. Bake for 10-12 minutes or until the bottom edges start to turn brown. Let cool on cooling rack. Dust with icing sugar.
